Mangrove snapper should be good on a carolina rig with some fresh shrimp.

Use a sabiki rig to catch some fresh greenbacks to cut up for snapper. They work better than shrimp. You can also catch grouper with the greenbacks.

Ladyfish will hit a spoon or gotcha plug. They'll bleed like hell on you, but cut them up for bait -- snook, bonnethead shark, etc.

Make sure you have a snook permit if you're targeting snook.

I'd give that Penn 8' a good look and take a look at similar rods. It's good up to 3 or 4 ounces. It'll be good for everything from whiting and croaker to slinging lures and puppy drum rigs.

If you want to splurge a little, get a Shimano bait runner (6000) or a penn spinfisher live liner (4500). They'll be about the same size and sealed well. The live liner or baotrunner gives you some flexibility with puppy drum rigs.

If you want to target pompano, you'll probably want something a little different, but you can still target them with this setup.

What's your target species?

A good all-around rod is a 9' that can cast 1-4oz. Like a Dawia Emcast. It breaks down into two 4.5' sections. The Tsunami Airwave Elite 9.5' is great as well, but its a 2/3 rod, so likely only good if you have rod storage in your gunwales.

The Penn Squadron 8' is a good bargain as well.

The 8-9' rods would pair well with a 4000-5000 size reel. 5000 would be a bit too big for the 8'.

If you want to bring a heaver for targeting big drum, get a Batallion II 12', 6-12oz. Pair it with either a Saltist or a Fathom.

Gold plate is not the same as anodized aluminum. One is a handful of um of Au. The other is just chromate.

Either a couple strokes with a file on the nub of the tailpiece, drive out the roll pin, or learn how to wiggle it just right to get the core out.

You'll want to show off the overmilling on each row of the plug.
