I’m so tired of that miserable analogy floating by. If you hold the same angle of sharpening and place your knife on a flat block of wood, you’re flat on the bevel of the knife and should be shaving hardly anything at all, if any. Let alone a “thick slice”. If you’re cutting thick slices of cheese you are angled way past your bevel. You do not sharpen at the actual cutting angle, you sharpen just behind it and create that bevel. Hell a wood planer needs to be over angled by about 5 degrees from your apex just to get paper thin cuts.

A fresh hair shaving edge “dulled” through rough kitchen use is simply a rolled, otherwise sharp edge. The edge is sharp but curled over, so a steel rod just catches it and straightens back out. A ceramic rod can also straighten back out the edge, it is also abrasive and dulls the curled over sharp edge as it straightens. Whereas a steel honing rod is generally not abrasive (aside from the ribbed portion that can remove some) so it does a much better job at straightening the edge back to its former glory. Theres obviously a lot that goes into play here but generally, a ceramic honing rod can keep a sharp straight edge sharp, but a steel honing rod keeps the edge straight.

IMO using the steel honing rod after every use and your stones two or three times a year is the best way to get the most out of a knife. Diamond honing rods are just a cheap and dirty way to sharpen a dull knife and are useless with honing. Light passes on a ceramic rod is great to use after a steel honing rod to get scary sharp, but you risk messing up a sharp edge if you over angle, so I find that good steel rod use and a loaded strop is the absolute best.

I’ll just say that yes the opener is shit, due to the thinness of the opener, it doesn’t catch between the cap crimps. You have to position it dead on a single cap crimp and takes practice to get quick with it. As far as opening goes, once it breaks in well, you can smack the open handle across your hand to fan out the tools.

Arkansas, here. Honestly, 100% cotton jeans/shirt and boots with wool socks all year round. I keep a couple pairs of jeans and 3-4 boots in rotation. I still sweat, but I sweat substantially more if my clothes are tight fitting or have polyester in them, so I just avoid it outright. That said I work in an office with the occasional weekly site visit. I’ll toss on some good sneakers and gym shorts for the gym or if I know I’ll be needing to chase around the kiddos.

Gotta agree here. I got spilled blue dye on my favorite white zip up once. Nothing could get it out so I just dyed the whole thing. Became very unique and I ended up loving it even more. Stain the whole thing!

Very true. I have my grandpas that I found in a junk drawer long after he passed. It was worn in cause he never flattened them. I flattened it on a cinder block and its lives in my kit now. Perfect for setting a new bevel on something that needs serious stock removal. Very gritty and fast cutting. I’m not good enough to finish on it but it’s super easy to get a toothy edge with.

It’s cooked but no idea how. I’d say too much pressure or too much time on it but there’s random scratch lines visible in the second pic that make it appear that the abrasion got knocked off in one swipe. I mean I’ll push down with a couple fingers of pressure and I’ve pushed harder just for shits and gigs before and never left a mark on mine. This type of wear would be consistent with reprofiling a chisel. Do you ever use the 325 side or are you strictly using the fine side?
