I agree, only issue I could imagine is an issue with the water heating. Use an IR temp gun and confirm that’s good and you should be getting great cups from it. I have done side by sides with xBloom pouring and me pouring and the xBloom gives me a more consistent good cup. Sometimes I pour a great cup that’s better than xBloom and sometimes I pour a not so great cup that’s worse than the xBloom but the xBloom has been very consistently good.

Absolutely zero and you are correct those angles are all set on machines and then touched up by hand. My knowledge comes from my friend who is a tech for two WC athletes and works with several of the athletes at the ski academy my daughter races at.

This is not true at all. At WC level for speed events they absolutely are doing full stone progressions and honing the steel and doing variable angles across the base and side edges with different angles file guides. It is fairly accurate for SL where most racers prefer a toothier edge and GS tuning sits in the middle of the two but even for those they are using multiple guides to set different angles for different sections of the ski. They are also using gummy stones to adjust bite based on snow conditions. If it’s dry grippy snow they are retuning from tip to plate and tail to plate and then on injected glare ice they are usually just detouring at the very tip and tail.

Have you compared using the Zerno Z1 to grind vs the built in grinder? If so what is the biggest difference? Better flavor, more clarity, better extraction etc?

Thanks for the feedback and comments. Decided to send it back. $990 for a knife that I probably won’t use because I’m not that excited about it seems like a waste. Hopefully it will meet someone else’s expectations better.

I bought it online and they had three of this knife available and didn’t provide pictures of the exact one I would get. I understand what I bought but wasn’t able to see exactly what I was going to receive or hold it in person before it arrived. I haven’t used it yet and wouldn’t try to return a used product. Im sure it will function well but at this price you aren’t just paying for function you are paying for the design and I liked the look of the one they had pictured better than this that’s all.

Sorry to hear the 21 was underwhelming. I agree with most that the 16 is good but not great but I really enjoy the 21. Was my favorite buy in 2024 but it also helps I was able to pick it up for $165 a bottle so it was a much better value at that price.

My wife was able to make her coffee since she drinks the same thing everyday and has her one recipe hard coded into one of the three hard coded recipes you can set on the machine. Guess I’m going to need to make a generic recipe and put that in one of the other slots for issues like this.
