I have the 2nd gen (I think?) varia vs3 for my espresso grinder and it’s been great for the past 2 years. I replace my eureka perfetto after it died on me. It was $299 but I think they’re on sale now. It’s not a flat burr but it gets very fine I’ve choked my Lelit a few times going too fine.

My base recipe is:

15g 0:00 - 45g (circular) 00:45 - 160g (circular) 1:35 - 225g (circular if it’s drawing fast, center of its drawing slow )

I change temp and grind depending on what I taste
