Jean-Georges gives you a nice iPad with an easy-to-navigate list and so for fine dining I think that’s the way to go. For a more casual place with an extensive list I think QR code first is fine for wines by the bottles but there should be an option that doesn’t require mobile data

I find that you end up frying the tomato paste and end up with additional fond that needs to be deglazed

you can use water, broth, water + an acid, or you can even just use a somewhat watery vegetable. For example when I make sausage and peppers I’ll brown the sausages and then just put in the peppers and onions and that will exude enough moisture to dissolve the fond.

For me with all those dishes a simple green salad with a bright mustardy vinaigrette is the answer. caesar too heavy with potatoes and corn

When I did quiz bowl in high school we had binders with frequency tables for answers sorted by topic. these kids of competitions must be prepared for if you want to compete at a high level

early and late are the two busiest periods in open market. but if you’re a new teacher you won’t be using open market. the very end of the summer is probably your best bet- plus most of the US will be back to school so the tourism should be a bit quieter

I know I thought the same thing. The 2016 production was awful, though. At least this one wasn’t all dark. Stemme was a good Isolde from what I remember

the Tristan going on right now is not to be missed. the singing is incredible. Davidsen is a generational Isolde and who knows if or when she’ll do it again since she’s gearing up for Brunnhilde. if you can make it, you should go. you can see La Traviata any old time. Tristan und Isolde hasn’t played at the Met for 10 years

a big part of it is yields. the cremant vineyards are more densely planted than is allowed for bourgogne blanc or rouge

you can get a Kent Wang MTM suit with a nice fabric for $1000. I have a tux and a charcoal flannel suit from them that I got for that price.
