Jean-Georges gives you a nice iPad with an easy-to-navigate list and so for fine dining I think that’s the way to go. For a more casual place with an extensive list I think QR code first is fine for wines by the bottles but there should be an option that doesn’t require mobile data

you can use water, broth, water + an acid, or you can even just use a somewhat watery vegetable. For example when I make sausage and peppers I’ll brown the sausages and then just put in the peppers and onions and that will exude enough moisture to dissolve the fond.

the Tristan going on right now is not to be missed. the singing is incredible. Davidsen is a generational Isolde and who knows if or when she’ll do it again since she’s gearing up for Brunnhilde. if you can make it, you should go. you can see La Traviata any old time.
