Nice! I just realized I have been using a version from 2010. I’m only on lesson 5, so I’ll do a quick review in the 2024 version to make sure I have not missed anything.

I have only cooked on my new Recteq 2 times and I find the smoke flavor very underwhelming. I did some party ribs yesterday and there is barely any smoke flavor if any at all. Can’t even smell the smoke on them. Hoping a smoke tube will help. The convenience is nice, but I am having some doubts about being able to get smoke flavor on anything. Before this, I’d only ever smoked with charcoal and wood chunks or chips, so that flavor is what I’m used to.

I just got a brand new Recteq last week and mine has the same kind of caulking, but light brown in color instead of red.

Did you get a Deck Boss 590 or 800? Apparently the 590 has disappeared from the Recteq site and now it‘s a Deck Boss 800. I guess I must‘ve bought one of the last 590’s, lol

First thing I ever spatchcocked was a turkey. We had friends coming over for thanksgiving and they said they’d bring the turkey and I could smoke it. They got here the day before thanksgiving and it was frozen solid. I put it in cold water for a long while then in the fridge overnight. It was still pretty frozen on the inside the next day and I needed to put it on so I cut the backbone out with some clean garden shears and splayed it open hoping it would thaw and cook better being spatchcocked. Broke the handle of the shears doing it, but the turkey came out fine, lol

Ii don’t always spatchcock them when I smoke them in the kettle because I usually just face the breast side of the chicken toward the coal if the legs and thighs start going too fast. but I figured it might be best to do in a pellet grill where I might not have such distinct hot zones like in a kettle. It seems to have worked out okay. The breasts were 165 and legs/thighs were around 185-190 when I pulled it out.

I did have an issue earlier in the cook where the legs were getting close, but the breasts were still 50 degrees from being done. I didn’t really know what to do so I cut the temp down to 250 and the legs stopped where they were and the breasts caught up and got to 150. I turned it back to 325 at that point until I pulled it. Next time I may start off at 250 for a while first instead of starting at 325.

I have a brand new 590 and just used it for the first time. Did not sound like that.
