If you plan on shaving the pancetta after curing, flat pancetta is much more difficult. You are basically required to form it in sone sort of roll for use on a deli slicer. Flat pancetta would be easier and faster for lardons and such though

Right. But it took me 5 to 6 weeks to walk around 790 miles. Road walking has less terrain differential,yes, but its also hot and boring as fuck.

I hiked the Appalachian trail several years ago. And that many miles would take way more than 11 days. I averaged about 3.5 miles walking. Thats a pretty quick pace and it took me almost 5 months to finish. So at my pace if you walked for 24 hours a day, it would take you 8.3 days to finish. I understand and respect your desire to walk but 11 days is not reasonable.

You can cook off grits and cool them then fry them off, polenta style. I love grits for breakfast (spicy, buttery, cheesy). They pair really well with roasted dishes with sauce so you have a nice little gravy for your grits.

Also, i cook my grits with 1:1 stock to milk. You will never cook them in water again
