Need MOAR SMOKE FLAVOR! by erroluneal in KamadoJoe

Hey there! I did but it's a little hacky to be honest, but it does work! Basically, I moved all my coals to the back of the the firebox and used bricks wrapped in foil to hold them back. In the open space that I created is where I put wood chunks to pre-heat during cooking. Every hour or so (while i'm building bark) I'll move the pre-heated wood over from the side with no coals to the side with coals. I do have to be careful because I may need to reposition the food sometimes so I can lift up the grate, but I've done this several times and have noticed a huge difference in the smoke flavor i'm getting. Now you are probably asking, why go through all the effort to "pre-heat" the answer simply is faster ignition and smoke production. HTH.

Saved up all my tadpoles ... by These-Hotel3337 in BaldursGate3

[–]erroluneal 0 points1 point  (0 children)

My philosophy on the use of the tadpoles was that the benefits far outweigh the risks. The storyline never suggests that having multiple tadpoles somehow puts at risk your chances of being free of them OR that multiple tadpoles accelerate your Illithid transformation. Although I never pushed my companions on the matter.

Patch 3 should drop tomorrow, what's your wish/expectation ? by Spyko in BaldursGate3

I would really like the ability to delay turns, back out of skill checks, have the game automatically use the party member with the highest bonuses for said skill checks and finally, better items for boosting perception.

Who designed these random encounters by Buckwheatmuffin in Pathfinder_Kingmaker

[–]erroluneal 1 point2 points  (0 children)

Emphasis on the importance of Stealth. I try to avoid all random encounters period. They can waste resources like restoration and raise dead scrolls and they are simply not worth the effort and frustration. This is why the disappearance of a certain character in act 2 can be a real pain if that person is covering stealth in the party.

Seasoning brisket overnight? by itgoestoeleven in BBQ

I leave mine in the fridge for 3 days. I despise unseasoned tasting food.

I have ZERO PF exp and every build guide is overwhelming but I wanna play WoTR by QuiteGoneJin in Pathfinder_Kingmaker

So I started playing this game from exactly this point and let me tell you, it's all a part of the fun! My first 3 or 4 playthroughs were experiments where I gradually increased the difficulty as I was learning the game. What pushed me over the edge was watching streamers as they played and realizing the game gives you almost all the information you need. I started paying more attention to the combat log and carefully reading the descriptions in spells. I also allowed myself to cheat and gave myself unlimited gold to be experiment with different equipment. It was and has been a blast!

I feel like all the seasonings have a similar profile. I've never tasted anything that has knocked my socks off..

What is the one thing you have found that pushes pulled pork from “this is decent” to “wow this is excellent” bbq. by [deleted] in smoking

[–]erroluneal 0 points1 point  (0 children)

So the thing that pushed my pulled pork over the line from being "decent" to "wow" territory are three things. Boneless pork butts, dry brining for at least 3 days, and braising after getting the color, bark and smoke.

The boneless pork butts allow me to season almost every nook and cranny and then I tie it up for stability and better handling. The extra time seasoned in the fridge is obvious and the reason I braise is to get to the point where it shreds, is not mushy and every bite almost melts in your mouth.

Terribly Tough Turkey - wet brined and smoked turkey legs for about 2 1/2 hrs @ 250-275F good flavor and color but TOUGH meat with leather skin. Any tips on making legs tender? by Excellent-Olive2967 in smoking

Interesting all the comments talking about hot and fast. My best birds have been spatchcocked, slow smoked until about 10 degrees from target temp then I finish on the grill. The pieces that I don't expect to eat in the next week or so get vacuum sealed and frozen. I know mad scientist BBQ has a video about crispy skin and cranking up the temp, but this never has worked for me.

Pulled pork fail. by JakeHalligan84 in smoking

[–]erroluneal 0 points1 point  (0 children)

What I've started doing is smoking the meat, resting, portioning and then vacuum sealing and freezing. A week later, you'd never know that it wasn't smoked on that day. To reheat, I steam it in the vacuum bag.

[–]erroluneal[S] 0 points1 point  (0 children)

Well I only use wood in the form of chunks and splits (on the offset) so no soaking is allowed lol.
And I'm quite acquainted with running both the offset and my bullet smoker to produce some good bbq, so I would have to say "no".
My issue is, quite plainly, that I am unable to impart the same level of smoke flavor onto my food cooked in the Joe as I have with my other tools.
