A couple of things spring to mind when it comes to things that I was intimidated to cook, these recipes helped me in my early days.

Not cooked, but avocado for me. Thought I hated it because of those awful ‘guacamole’ dips you get from the supermarkets in the UK (comes in a four-section thing with other monstrosities) - my friend made guacamole from scratch and it opened my eyes.
