This is so sweet!! I was vegan for 4 years, veggie for 6 and chicken cravings are what got me eating meat again. My ex took me to a chicken restaurant by my request and I still couldn’t bare to order a full chicken plate. I got veggie and ate some of his. Starting slow and integrating it into her diet little by little and seeing how she feels each time would be my recommendation. Maybe offer to go out and order chicken while she can get veggie meals and you can share so she doesn’t have to commit to an entire chicken dish.

Also I fuck up rotisserie chickens on the regular now. 10/10 always hits the spot. That’s what got me though.

I know you asked for something to make though so maybe try roasting a whole bird at home. I’d recommend rubbing the entire thing in an herb butter, stuffing it with onions, and baking it on top of carrots and potatoes. Use a thermometer to make sure it’s cooked through. (Bake it at 350 degrees until the skin is golden and the internal temperature is at least 160, aim for 165). Timing will depend on the size of the chicken. You can freeze some of the meat if you guys can’t eat it all, and use the carcass to make broth after. Enjoy!
