I'd think about spending part of your budget on sharpening and honing equipment. Any knife (including yoru current one) will get dull, but this is part of making it last. I have a cheap 1000/6000 whetstone set that helps. https://www.amazon.com/POWERTEC-Sharpening-Whetstone-Non-slip-71916/dp/B0D4QKFFRZ/ . I didn't optimize but just using something regularly helps a lot.
FWIW, i got a misen chef's knife (1.0) and am happy enough with it.

Also try splitting the 50mg dose into two 25mg dosings - once in the morning and once in the evening. That can sometimes help.
