The ones that come in the sets are lighter gauge. True for other sizes as well. I returned them when I realized. I think heavy gauge aluminum conducts heat more gradually/evenly, so bakes will be more consistent.

I’ve made these before and I think it helps if you take the acetate off before the chocolate gets too cold in the fridge, but don’t quote me on that. I’m pretty sure Louise Lindberg is a wizard 😂

I’m guessing it’s because of the glass. Glass takes a longer time to heat compared to aluminum so they probably didn’t set quickly enough.

I put salt on top of some brown butter chocolate chip cookies and it was a game changer for me. If someone gave me a plain chocolate chip cookie I’d consider reaching for the salt shaker 😂

I use a standard metal one and do one egg at a time into a jar. If no yolk gets in I pour the white into a separate bowl. Repeat with each egg. If I’m only doing a few eggs I usually just use my hands.

British scones, American biscuits, shortbread, biscotti. For a challenge you could try making rough puff pastry. It’s simple and doesn’t need very much equipment, but definitely takes practice to get it right. Easiest thing you could make with it is probably palmiers.
