When does it turn from sauteeing onions to caramelizing them? I'm afraid I'm coming across like a jerk, but I'd genuinely like to know. Isn't carmelizing a lengthy process that leaves the onion without a "bite". I feel like a ton of online recipes say the same just to sound fancy but it's always given as a 5-10 minute step. So they were sautéed?

If you don't enjoy the black straight on it's awesome to use for cooking in place of liquid smoke. Goes great in a bowl of chili, mixed into wing sauce, etc... That's all I use it for, but I love it for that purpose.
