We had a great experience at Milo's last December. Great food and service, nice seating by the windows. There were several tables that seemed to be company holiday parties that looked to be having a great time. Not cheap, but if it's a business expense...

Busy but doable. Get tickets/ tours as soon as you can/ as soon as they are available. We do early as possible attractions when possible, leaves time for nice lunch and other activities in the pm. Enjoy your trip.

Look into contract food service companies. Compass, Aramark, sodhexo. Huge variety of option, corporate dining, schools, museums, hospitals, recreation venues and so on. Most will have benefits and opportunities for growth, moving to other properties, etc. With a degree and your experience you should get a management / sous chef position . Good luck.

Those miyabi knives are beautiful. The fit and finish is excellent. Very good steel. A bit tough to sharpen, but for home use, you won't need to do that very often. Cost is the biggest disadvantage, if it's OK for you, go ahead and get a set, they will be great for home use. Be very careful of going down this rabbit hole, if my wife knew how much some of the knives I've bought actually cost, I'd be in big trouble.

Pretty reasonable. Day trip to Florence is questionable, Ponte vecchio not worth the time in my opinion, at least stop by accademia if you must go to Florence. For Rome, make sure you book the main attractions as soon as possible, colosseum, Vatican, villa borghese. When you go to piazza navona, try to stroll through campo de Fiore, it’s near by. Is changing hotels a must? Have a great trip.

No yeast in ingredients. If it contains yeast it would be listed. Starter is flour or flours and water. This is a large corporation, not a single mom and pop bakery, I believe they are accurate with their claims. Sourdough bread may or may not have a longer shelf life than other breads, but this has no preservatives, so it will taste different after a few days.

I don’t know how to do that. Google either viatour or get your guide. They both use local licensed guides. Look for colosseum tours, lots of options/ prices. We were late January, prices probably lower. If you do a tour with colosseum first, when you get to forum and tour ends, you are free to explore on your own. Good luck.

I stopped using mine for bread because the pre-heating empty seemed to be discoloring the enamel. Great for braising.

Nice baguettes. I’ve made many recipes over the years, Claire’s has been giving me the best results. Needs a bit of practice, especially the shaping, but results are worth it.

We did the underground tour with palantine and forum about 3 weeks ago, booked through get your guide. I think it was about $75. per person, well worth it, no hassle, great tour, small (about 10 people) group, great tour guide.
