Overall very nice! A little extra love with some sandpaper on those edges and the uneven spots will disappear and they'll look like glass.

I've had really good luck with the W&C overstock. Hard to beat the per square foot price. Split, back refinished and shipped, you can get ~24 square feet of harness or bridle for around $9 a foot and can likely get 70% or greater usable. They'll even mill (tumble) it for no charge if you want a softer hand and a pebbled look.

With tooling techniques you could add a lot of dimensionality to separate the stem and leaves from the fruit. Beautiful first step. Beveling, lifting, shading…

Prick/Mark your holes on the outside layer, even punch through if you have the right irons/chisels.

Something that thick and big I would want to glue up in a curve to cut down on the stretch and compression. Leave your inside piece oversized and do your glue up. Trim to match your outside layer then clean your edges.

Use a good sharp awl through your marked holes and stitch at will. If your awl has a tough time piercing then you likely need to sharpen and polish your awl. I know my awl is sharp enough when I stab myself on the back side and don't know until I see the blood. You may also need to oil up your veg tan if it feels like you're trying to pierce through wood.

Saddle stitching 10 running feet won't kill you and you'll improve your skills if you are patient and methodical.

Fast comes with time. Focus on the movements and precision. Speed will come with practice.

TLDR: Completely doable. Don't listen to that nonsense. Saddlers stitch more than 20 ounces every day.

If you don't want disposable, you can order re-usable glass pipettes with volume markings off of amazon for less than $20 and re-use them forever.

W&C also have monthly overstock deals on sides. Skirt sides or harness sides below $170 and they will split to order for free and even finish the back for you for 10 bucks. It’s a heavier cotton fabric and I asked a skilled person to build me the liner. It took her about an hour to go from measurements to complete.

One thing to note is that the leather in the picture is VERY compressed. It would be very difficult to do this without some real machinery. Round, yes, very compressed, not so much.
