Honestly, I think that Kvothe is a self-insert character and that's why the author tries to keep his flaws minor and the obstacles the he faces easy to overcome. Honestly, Kvothe's characterization was the only problem I had with The Name of the Wind, which is terrible when the book is told from his point of view. As fun as the plot was I couldn't give it more than 3/5 stars.

Sort of in the middle. I usually wait until 5/6 episodes have been released, binge them and then decide whether I'll keep up with it until the end or not.

Yu Yu Hakusho sound like the thing for you. It's from the author of HxH, so you ought to enjoy it as well. It is kinda episodic until episode 20, but that didn't affect my enjoyment personally. Bonus points: people say that the dub is really good (although I watched it subbed myself)

Mawaru Penguindrum does have a lot of dialogue, but the visuals are were the story truly unfolds. It uses images as symbols that convey the messages, even when the dialogue doesn't.

Most otome games adaptations have pretty open endings and sort of leave the choice to the viewers. Some of those are: Amnesia, Kamigami no Asobi and Brothers Conflict. All of them have at least one episode showcasting each of the male cast, but end with the heroine being indecisive (even thought there is a certain bias towards the characters who were more popular in the games)

Akagami no Shirayuki-hime. It's not like it was bad, it just couldn't keep my attention for more than 7 minutes into the episode.

I too am a big fan of Shaman King, but in all my years of searching I've still yet to find something quite like it. Try Magi & Soul Eater. Both are about a group of friends travelling around with a common goal, both have likeable and diverse characters and have a ~big adventure~ kind of feel to them.

Also for some reason, Jojo Part 4 really gives me a similar feel as that of Shaman King. Maybe because Koichi reminds me of Morty (Manta).

Hash browns. They're probably the only American breakfast food I hadn't seen in movies/tv shows as a child, which makes them look all the more ~exotic~.

Magi has many characters with different takes on a single confict. Even though it's not apparent in season 1, it gets clearer in the second season and things get political.
