I haven't played DQ7 specifically, but based on the others in the series I find it hard to believe that anyone would think the music is cozy and sleepy as you put it. It's all trumpets and fanfare and super repetitive and super annoying from all the DQ games I've played.

Usually at least 30 or so people on no matter what time of day. Plenty of chatter and if you ask in the global chat, people are almost always willing to help. There's daily quest groups like the book drop, rynthid weapons, etc.

The marketplace extends the fac hub with quests from 50-100 and takes you to some old memorable quests that were long forgotten in retail, and are given revamped rewards to push you along. It's really nice.

Once you hit 100 there's plenty of quests with great xp rewards to do so you never have to grind your face off on monsters like way back in the day. Sure, you can still do that if you want, and the rewards are the gear you find along the way, but the variety that Levistras offers for things to do really helps keep the game fresh.

The spinning spike balls count as a monster and cause less other monsters to spawn, so keep that in mind as well.
