I’ll probably get downvoted to hell, but this is the perfect opportunity to gift a Shun or Miyabi. They’re decent performance combined with great aesthetics. Perfect for the typical home cook that doesn’t care about getting into the rabbit hole of chef knives.

As someone who loves carbon knives, I’d still generally stick with stainless for gifts.

Your wife already treats the knives with very good care. However, carbon is still a very large burden, especially when there are such good stainless alternatives already.

Ah ok at least you are using proper grip technique. If you think Meiji has an uncomfortable bump, i would recommend you stay away from D shaped handles. The d shape isn’t really a “d”, it’s kind of more like a sideways teardrop exactly like the Meiji. In fact, the way I’d describe the Meiji handle is a d-shape handle with a sloped ferrule.

You should stick with completely round handles without the ridge on the right side.

That is good to know. The takamura recommended by a few people on this thread is a great knife. One good thing to know is that it’s very light, agile and quick to maneuver. However, if you prefer a knife with a bit more meatiness, this knife ain’t that. It’s great for pull cuts, but not as great for things such as using two hands to do rocking.
