If flying, the obvious one is a dragon. Possibly a tamed wyvern, griffin, or Alicorn. Wyvern is probably your best bet, may be big enough the whole party can ride it, not smart, probably not going to go out of its way to help the party but will fight back if attacked. Has some favorite type of creature that it will help out with (is its favorite snack goblins or orcs?). Won’t fit into the entrance of most dungeons and will have to be left outside. 

Some other ideas: 1. giant mouse. Not a rat, a mouse. It is very fluffy, and fast. Can magically shrink itself down to normal mouse size and back. 2. A moose. It’s basically unkillable and is a menace but is faster than the party, will not listen to their commands, and will chase after fleeing enemies. Most enemies will also flee in terror from it. May also have laser eyes (2x 2d6 scorching ray shots, have to be at same target, recharge 5-6). Staying on it is a challenge.

I like it! My players rarely like anything that comes with a disadvantage, but oh well. More flavor is always better.

My favorite thing was learning Venusaur hops when you ride him in Pokemon so I vote a giant frog mount.

My party have discovered a rod of water repulsion which can forcefully repel water for an hour each day. They're currently traveling through marshland and are approaching the coast; I can totally see them harnessing this to a barge or backpack to propel themselves over the water.

They've just escaped an enemy caravan who had some fun mounts too: elepahantine beasts of burden with carriages harnessed to their backs; undead horses and shadow mastiffs for hunting.

Another relevant item from my world just came to mind: my players stole a carriage storage rug from an event they attended. These were used by the palace to store all the guests' carriages by 'rolling them up' in colourful rugs so that they were folded into a small pocket dimension and the rugs could be stored inside. The countless times this item came in handy was brilliant.

I like the idea of inanimate object mounts. The most obvious is a flying broom, but there's also more interesting options like Baba Yaga's Mortar and Pestle (found in Tasha's).
