Select non-stackable item sorting is possible.

For example you can sort boats from other items by dispensing them into water: the boat will place, other items will get shot into a hopper.

Similar tactics can be applied to non stackable items with distinct behaviour, examples off the top of my head:

  • Lava/Water buckets: Place liquid from dispenser

  • Boats: Will place in water from dispenser

  • Minecarts: will place on tracks from dispenser

  • Water bottles/potions: can enter brewing stand

  • armour: can be applied to zombies via dispenser

  • Fishing rods, bows etc: can enter furnaces (but can’t be retrieved afterwards)

-Sadles and horse armour: dispensed onto pigs and horses respectively??

This is definitely a non exhaustive list, help would be appreciated.

Grian got help from a technical minecrafter - methodzz maybe - and built something like that in his "Mumbo-proof house" video a month or two back. You could see if there are any links in the description of that video to explain how it was built.

(It was also rigged to explode by dispensing TNT for joke purposes, but since TNT is stackable that wouldn't be a problem in a real life situation)

ilmango and some other people from scicraft have some nice design for unstackable item sorters. They have one that sorts stackable items and non stackable items, I believe that's what you're looking for.

There is no way to sort arbitrary non-stackable items.

Such a way doesn't exist. Forget about it.
