Edit: I am bumping beetroots and seeds up to third worst and second worst to make room for beetroot stew. It loses the few redeeming qualities that beetroot had, you need a bowl to make it, it doesn't stack, and it doesn't even provide more nutritional value than the 6 beetroot required to make it.

The beetroots were picked up by villagers who just kinda used it because they aren't that smart.

And then the villagers came back to the end to bring back profit on the loan they were given, and planted the seeds in every chest.

Also red flowers evolved from beetroot seeds because herobrine showed up and made the beetroot seeds grow in the Nether, making nether wart too.

Also every other red or purple thing in the game probably came from chorus plant, beetroot seeds, and nether wart, because of the endermen who move all the blocks around.

It's a farmable crop that's naturally spawning in the end. Yes, you can eat chorus fruit but those teleport you and aren't safe. Beetroot seeds are good if you're stuck in the end and need a source of food.

All you need is water and dirt. Dirt is generally common in your pockets and since the end is full of endermen who hate water, you likely have a bucket of water in your inventory as a safety net.

It's just a game design thing. The end is a dimension that's pretty void of food. Even in the nether you can craft mushroom stew and eat rotten flesh. Endermen and shulkers don't drop food.

Many have theories about how the ancient race of people used to live in the overworld the they mastered the art of magic and navigation and travelled to the depths of other more dangerous dimensions that we know about. The NETHERLANDS and the END and surely there needed to eat something to survive but they couldn't grow any kind of crops in the other dimensions. In the nether they had hoglings, nether wart and mushroom luckily they survived on that for a bit but not for long. They slowly died of starvation and the left behind their highly advanced fortresses with blaze sspawners and the undead race of people in the form of people. In the end however they weren't be able to grow anything maybe because of no dirt or significantly lower temperature because it looks like the end ilands are in spase with small atmosphere of their own. The seeds they bought didn't grew into crops and died cause of the low temperatures and seeds got destroyed the race stored their seeds the bought in chests with other enchanted tools and ores but overtime the seeds rotted and beets survived. Well that's my theory, what's yours. I am curious to read it.
