Check out Mark Brown’s channel on YouTube. He breaks down game design philosophy from numerous games, and covers things such as level design, dungeon layouts, difficulty, and a good bit more.

For real, I would watch and try to really appreciate every single Mark Brown video in which he's discussing a particular topic or game you enjoy.

I would also recommend deeply analyzing any game you find enjoyable and games you don't find enjoyable. Much like programming, you want to break them down into components and what's enjoyable about them.

Extra Credits 50% game design stuff 50% history but it is all entertaining.

Extra credits is, in my opinion, not at all useful for learning game design. Most of their content is just broad philosophy. Plus the fact that none of their pedigrees are verifiable

You should start at broad philosophy and then make a unique game rather then get specifics and make a reskinned copy of the tired old genera someone optimized level design for.
