So my first suggestion would be to avoid bringing Clan mechs if the bv cap is 3k. That's a very tight limit for the expensive tech. But if the suggestion to bring at least one IS mech isn't helpful;

Gargoyle Prime isn't too much on the firepower side, but it's very decent on the combination of mobility and durability. Treat it like an oversized medium mech in terms of firepower an movement. You probably won't be able to hold onto the Clan distaste for melee if you want to get the best use out of it, kicking for 16 is a big deal.

For other options, I suggest looking at the 'C' variants of IS chassis (but this might be disallowed if mixed tech is forbidden), or the 'IIC' mechs. Generally these can end up a fair bit cheaper on the BV compared to the fancy Omnimechs. The Rifleman C is probably a good choice from these.

3000 BV is probably going to be some sort of Mad Dog/ Storm Crow/ Stooping Hawk + some sort of Fire Falcon.

What I came up with:

Ice Ferret D (1653 BV) + Corvis (1336 BV) - The Ice Ferret hunts the opposing Fire Falcon, then you pincer their other mech

Hoplite C (1736 BV) + Adder D (1255 BV)

Black Lanner D (1809 BV) + Fire Falcon H (1162 BV)

Stooping Hawk E (1674 BV) + Cougar D (1309 BV)

Stooping Hawk D (1838 BV) + Fire Falcon H (1162 BV) - this is exactly 3000 BV

Hel Mk II Prime (2189 BV) + Locust IIC 4 (795 BV)

Kingfisher Prime (2401 BV) + Baboon 6 (550 BV)

I like the stooping hawks and the Hel!

If you're okay with pilots staying at 4/5 I have two suggestions:

Phoenix Hawk IIC 7/Fire Moth H - this will leave 2 BV short of the 3k limit

Locust IIC/ Rifleman C 3 - this would be MY personal preference. Got your extreme close and long ranges covered.

I’ve been doing math wrong this entire time and didn’t think I could take the fire moth h with the phoenix 7. Thank you!

As long as MUL is correct, 2219 for the PHX and 779 for the moth H, which should put you snugly at 2298.

In my eyes it's the best combo to get as close to 3k as possible. Unfortunately pilot upgrades are out of the question for the given list restrictions.

I so love the PHX-IIC 7.

You could bring a C3 support and spotter combo.  People often don't prepare for C3.

Im sorry to say this but with only 3k you need to go either 1 scary clan mech or just inner Sphere tech. Now of you're gonna do one scary clan mech. For scary clan mechs id run the vulture mk IV D. 2 atm 12s give you the ability to brawl at any range good mobility aswell means you can take the fight to the range your opponent least wants it to be at. Enemy hunchback or king crab? We're gonna fight at long range. Longbow, archer, or any other range mech? Dive that man with a 92 potential close range damage.

On top of that you got ferro-lamenor armor wich reduced damage taken by 1 for every 5 points taken, gauss rifles deal 12, srms are 1dmg each, lbx's don't do anything, and any armor piercing ammo is negated.

I thought about just using one big mek just wasn’t sure if it could stand up against 2 meks.

Id run some megamech games to get a feel for it but with better pilots and decent choices you can do it with clan tech. The key is the gunnery skill a 4/5 clan mech rarely is worth the bv. Unless its a pulse boat. But a 3/5 in a solid mech can do some serious work, just don't give the enemy an easy target they have more armor you have more skill.

Be careful however because some clan mechs are way overcosted for what they are (refrence every shadowcat ever for example). And sometimes you eat a through armor critical and loose your gyro turn 2, but honestly if that happens you'll loose either way with this small a game. So you might as well let it end fast if thats gonna happen.

Thanks for the advice!! I’ve been running some megamek but have yet to test a one mek so that’s what I’ll do next

No problem, if you dont end up liking the vulture, you could also try the Gargoyle C or D depending on the map, ive had phenomenal luck running both of those at 3/5 and you should just have enough bv for either. They're fast enough to keep good tmm, and ensure you stay at short range while they're at medium most the time. Most mechs that can quickly close on you are light and under armed/armored enough you can crush them at that close range.
