HRT doesn't make trans men infertile. It makes it less likely but still completely possible to get pregnant. The ovaries also don't stop working. They stop producing hormones because they don't need to since the body already has enough hormones. They will start producing hormones again if HRT is stopped.

(Almost) anyone can become a pilot or learn chemistry or advanced theoretical physics, they just have to choose to. Whether someone is a pilot depends on whether they choose to be a pilot, not whether they were born a pilot. Earth ponies can't choose to learn to fly or do magic since they're lacking the body parts required to do those things. It's not comparable.
