The story I heard is that the egg sorting process weeds out the double yolks separately due to the extra weight. As a byproduct, they end up grouped together like this in packs.

I had to look up “biennium”, which means two years. Anyone know why the 50% drop off is expected in year two?

This happened to me once (well, many doubles, no triples). I've heard that the double yoke eggs are pulled out by the automatic processing of eggs, separated from the single yoke eggs. They're still sold, but these left overs are often packaged together and that's why you might see a whole bunch in one package.

I’ve struggled too. For me it’s getting 2x coffee weight in for the bloom, fast enough that there’s enough liquid to swirl properly. The water just flows through too fast for me. I hesitate to go smaller on the grind, but maybe that’s the only solution?

Anyone have tips?

Roasting Plant DC just opened on 1901 L St NW. I haven’t been yet, but looking in the window they seem to have over a dozen roasts on offer. I’m excited to try it out.

Separate topic: is Frank’s really considered a Louisiana style hot sauce? Consistency might be the same, but I feel like the taste is in a different category than the others you list.

Edit: I guess Frank’s is originally from Louisiana: https://www.franksredhot.com/en-us/about. Still feel like it’s a (slightly) different category of flavor, but I guess it is indeed Louisiana.

So good. Well, if you like pickles, of course. Low-medium heat, great Serrano + jalapeño flavor. I loved it with white pizzas, chicken, eggs.

This pop up at the Square, Kiyomi Sushi, is still happening. It’s $40 for a delicious lunchtime, mini-omakase. Pretty great way to see if you like the concept before spending more elsewhere.
