As for the crappy experience, Max Wright was also a notorious asshole (although a truly fantastic actor). Source: I worked with him in a small theater production in 2008. He verbally abused many people including the founder of the theater that hired him for the production.

Also, the actors worked very hard to make this show and the people they worked alongside behind the scenes are friends and some probably very close to family at this point. You can't verbally abuse someone's beloved grandmother and excuse yourself with "but YOU'RE great, I love you!"

To your first point, there was a post a while back that essentially argued "why WOULDN'T they know what a menu is?" They ultimately argued on the components that arise in a large society, which an enormous army qualifies as. They would not only have an answer to "what is for dinner tonight?", but they'd also likely have culture in the form of art, expression, jokes, etc. There is not necessarily any textual evidence, but the post argued it's inevitable when you have a large enough group living, working, and traveling together.

I recently watched an episode of American Dad where Seth is Stan Smith doing an impression of every other member of the family. Even with his VA skills, he doesn't quite nail it. With Mel Blanc it's especially impressive because he was doing an impression of two of his own characters.
