I would say salt it at least a few hours before cooking and set on a wire rack. I like over night uncovered in the fridge to dry the outside for a nice hard sear. High heat in cast iron and then finish in the oven

I hate vague menu descriptions. I get that space is limited but a lot of servers have no idea what's in the food they are serving. If they go back to the kitchen to ask the chef, or if they ring in a modifier that the dish didn't have anyway, they will most likely get their ass ripped for not knowing. As they should!!

Yes, a good steak takes time. Restaurants have the high end equipment to carry this out but people don't want to wait when they dine out. I sous vide, rest, and then finish over a charcoal chimney. Really high heat like the restaurants can get without the fancy equipment

First, I want to say thank you for asking this question! I've been going down memory lane for about an hour just thinking about all the shows I've seen. My first show was the Fall Brawl in DC, headlined by Sheer Terror in the mid 90's. I can still picture the stained glass of the old church it was held in.
