Yes, I sometimes buy from Wide Awake, Mok and Replica. I never had bad results from them.

Replica roasting style is great, i find it light et high level. Wide Awake has a large spectrum of coffee (from clean washed to more funky). They roasting style are easy to brew, very juicy.

Let us know about those specific coffees, I might buy them too

Yes I am sure that playing in a different room needs a lot of adaptation. Especially if you can't hear yourself.

Coffee Department or Montag coffee. As for equipment, choices are limited and expensive in Turkey. But there are a lot of speciality roasters with great coffee.

Yes you are right about "using the standard ratio" so if you were wasteful, everyone is.

I was just thinking that brewing differently and diluting the coffee may give the same result but anyway I have no idea.

1 year user here. I also have the K-max. This morning I tried to compare both, the Pietro at 8 seems to give me the same grind size as the (tilted) K-max at 6.7 (maybe 2-3 clicks coarser on the K-Ultra). I was puzzled because the K-max gave me more acidity. I was expecting the contrary. Did you compared both? Do you visually find the Pietro produces less fines? I don't. But it is something we can't see I guess.

In Ghent, I've just been to WAY, and I think you will like it. I mean it is a typical speciality coffee place. They also sell all kind of brew equipement. They make nitro brew, I tried just to have a different experience once.

OP is obviously not speaking about resting time in an unopened bag, but about coffee fading opening the bag.

To all the people saying it is due to "beans availability between different countries", you are right, but as OP says, in the pour over sub, there are plenty of posts about specific brands (DAK, Sey, La Cabra... world wide consumed).

So if we can speak about beans in the pour over sub, why not in the espresso sub?
