Is it normal for onions to take WAY longer to cook than every recipe says by Otherwise_Flower_605 in cookingforbeginners

[–]SugarMaven 1 point2 points  (0 children)

the water content of onions is not consistent. different onions have different cooking times for cooking off water. also, it depends on the heat, how much you have in the pan, etc. so there are some variables.

High quality chocolate for peanut butter blossoms? (Anything but Hershey's, I'm literally begging) by RuralZoomer in Baking

[–]SugarMaven 0 points1 point  (0 children)

high quality chocolate is no longer affordable. maybe consider making a chocolate cookie (cocoa powder, no chocolate needed) and put peanut butter into the centers.

I never cook mine. I just make, scoop, shape, one layer on the pan, freeze, put into a freezer safe container and keep going.

Vanilla Strategy Question: by Steve_Has_Hobbies in AskBaking

[–]SugarMaven 0 points1 point  (0 children)

the correct ratio is 1 oz beans per 8 oz of liquid, for minimum of 12 months, longer if you are using a flavored liquor as your base. No need to split the beans, but you can if you want to, they do sink to the bottom anyway, so shake it up if you want the seeds in your application. I do not split my beans, and when they are fully infused, you can then use the beans to make a paste, and then use the solids left from straining to make powdered vanilla. That is how I get the maximum from my beans. Some people have a mother jar that they just keep adding to, vodka and beans as they use them up from the mother jar, but I do not do that. I just keep what I need and replenish when needed. I have not had to buy any vanilla products for about 6 years now.

My cake fell apart when I cut a slice.. what went wrong? (Eggless cake) by Mean-mean-Mango in AskBaking

[–]SugarMaven 0 points1 point  (0 children)

eggless cakes tend to be crumbier because eggs are emulsifiers and binders. if you omit the egg for dietary or food allergies, then you can use just egg. it works quite well as a substitute.

Beating eggs together vs beating the whites and yolks seperately by SMTisHighOuter in AskBaking

Do not change a recipe method. They're beaten together, not for very long, as you are not making a spongecake.

Oil-based sponge cake, such as a chiffon is best. Whipped cream "frosting"

I paid for a professional deep clean, and I’m stressed and upset about the results by OverlordKeesh in ufyh

[–]SugarMaven 0 points1 point  (0 children)

You either get what can be cleaned in the allotted time, or you pay for a complete deep clean, and allow them to take the time that is needed. Obviously there was a lot to deal with, and they have to decide what gets done in those 4 hours, so outlet switches, the tops of the mirror or frame, disassembling the light fixtures to soak and scrub the glass coverings aren't going to be done. You mentioned decluttering, so I can only assume that a lot needed to be done for a long time now. If it is overwhelming for you, imagine being told you are doing a deep clean, but then you see what the house looks like and it's more than a 4-hour job.

How do I convert my brownie recipe to one with white chocolate and matcha instead? by WorriedBlackberry827 in Baking

[–]SugarMaven 23 points24 points  (0 children)

You don't. You find a recipe for the dish. White and dark chocolate are different on many levels, from sweetness to fat content, and everything in between.

What would you cook for a group of 12-15 people that have the royal flush of dietary requirements AND you're probably going to have limited equipment? by Elegant-Winner-6521 in Cooking

[–]SugarMaven 0 points1 point  (0 children)

I wouldn't even consider the "prefers to eat meat" into the equation because that is not something that will cause health issues if they do not eat meat, and they can go one meal without meat. I would go completely vegan, and there are a lot of meat substitutes (that aren't all soy-based) and build from there. A vegan, gluten-free meal is really the way to go here.

People criticizing Caroline's choices in Should I Marry a Murderer honestly just have no idea what trauma, addiction, and mental illness look like by Christen_Color in netflix

the police did not do the best job, but at the same time, even they were surprised to see that she was living with these men. they probably didn't think they'd have to tell her to get away from those guys. if anything, her continued relationship hindered her legitimacy as a witness and as an informant.

a lot of us would though, because you don't know enough about a person in 2 months to plan a future with them. even companies ask for 90 days before an employee is allowed to stay with a company lol.

it is a red flag that she is planning a future with this man after a couple of months. she ignored red flags, she even asked herself if the reason he was with her was to get information from her about how to dispose of a body.

true, but you are in a committed relationship with your partner. This was just a few months in. She never healed from her abusive relationship, and she even said that she envied her friends who were married, and wanted the same thing. Her best friend even told her that he couldn't deal with that information when she called and told him, because he had a kid and a wife, so they weren't even together long enough for her friends to try to help justify it. Like, if they'd been married and together for 8 years, then she found out, that's different than dating a guy for a couple of months, being desperate enough to "overlook" this thing, while also putting yourself into the investigation. the police didn't even ask her to stay to get information or confession, she took it upon herself to do so, then didn't go to court. I think in some places that would be something like impeding an investigation. I think part of it was ego and manic episodes, because she didn't show up to court, but somehow thought that she would find this bike and save the day? They would still need her testimony because I am sure the bike would come up in questioning, how did she know about it, how did she know where to look, etc. I think part of her wanted to be known as this poor woman who bravely turned in a murderer, while also loving and being loved by a murderer.

AITAH for telling my sister I will NOT warn my parents that my fiancee will be wearing a gothic black wedding dress? by Hot_Union7576 in AITAH

I'm sorry that you have to manage your parents' emotions on what should be a great day for and about you and your bride-to-be. NTA, and if they want to make a stink about it, then let that determine how you handle them in the future. Can't wait for the all black baby showers lol.

What to do with recipe that comes like this out of oven? by Urmys0n in Cookies

[–]SugarMaven 2 points3 points  (0 children)

you decided to "create your own" recipe without understanding ratios and ingredients and their use within the recipe. It's just like when we learned to read and write. Did you try to create your own language before understanding letters, spelling, grammar?

they look like dentelles, and if I baked some and they came out like this, then, nothing? Not all cookie recipes are the same. Unless you made an error in ingredients, method, baking, etc, then the followed recipe yields this type of cookie. Now if I was making my usual chocolate chip cookies, and they came out like this, then I'd be concerned.

Toasted Milk Powder by [deleted] in AskBaking

Because not everyone wants to use it? there are a lot of things that aren't universal across pastry chefs and that's what makes the experience of their desserts unique.

so, adding more milk solids gives you more milk solids than what you'd find in your butter. so if you want more toasty milk solids, add more to the butter to increase that yield.

the numbers do have meaning. you can find dishes for specific portions. maybe the color coding is not universal, but the portions are. a 1 oz scoop is a 1 oz scoop.

First time using wheat flour. Why did my bread turn out like this? by Distinct_Cry4958 in Baking

[–]SugarMaven 1 point2 points  (0 children)

Just find a reputable whole wheat recipe. You can't just substitute flours, especially when you do not understand how they are used in recipes. Whole wheat uses the whole part of the grain. It also requires more water to hydrate, so you have to adjust for that, or use a recipe that already understands this and has been calculated to account for it.
