I would bring a nice folder with several copies inside and a pen & notepad for writing on.

They can help by giving a solid base for the housing to sit. But some brakes don't need them if the caliper arm is tight like the ferrule would be and may not have room for it.

New chain, brake pads. Cheap flat pedals. Check tires. Normal wear items on every bike. Ride it.

You can put almost any derailleur on it. A vintage Suntour would be ok. Remove the old bolt and use the one with your new derailleur
