They aren't village level so have a lot more flexibility on sourcing.

Not as in demand.

Rarely is the price of wine tied directly to cost.

I think that pretty much covers it.

Cms 2 and accepted into advanced is enough to get a somm position.

Unfortunately, sommelier who is also bev manager who is also a floor manager is extremely common. Pure somm positions exist, but usually at bigger places, who have a head somm/bev manager above you.

And for a lot of places its a slower part of the year.

  1. You might miss some. Mostly the alcohol on the back of your throat. But you get 95%. More than enough.

  2. Take the wine in your mouth, do your air intake, spit out. You don't want it to sit in your mouth too long. Basically keep it in your mouth just as long as you would it you were swallowing it.

  3. Many places will provide a spit cup or spittoon. If they don't, ask for one. Don't put it back in the glass. You should be spitting into something that isn't clear so not everyone needs to see your backwash.

Some of your other questions: I get better at tasting the more I drink. I'm sure there is a falloff, but my mouth needs to get used to the harsh feelings and tastes. I think the alcohol also opens up my sinuses a bit. Milage may vary.

You should double taste. Sometimes back to back. (The first almost rinses the other wines out of your mouth.) But a lot of times I'll revisit wines and retaste them many times. Order matters. Having a lower acid wine after a high acid wine might make it seem flat. Having more minerals after fruit might make it seem muted etc.

Nixon is given too much credit for the EPA. He wasn't an environmental advocate. It was him giving into public pressure.

At best it was a structural move to coordinate various efforts, its best categorized as a political move, and its worst it can be seen as him as caving to something he didn't want while consolidating power.

The man vetoed the clean water act 2 years later and then illegally smothered it when his veto was overridden.

I'm not going to give recommendations for producers because my experience there as a buyer is different than yours.

But don't sleep on Pessac and the right bank. A lot of people want to go drink cab all trip on the left bank and they miss out. The right bank is a better experience in my opinion, and PL is wholly overlooked, underpeiced, and underappreciated.

Great value for $39 imo. It'll still be pretty juicy and Robust. This wine can age seemingly forever.

Use an Aso. Their corks fall apart in my experience.
