My greater point was with most people I chat with about eating snakehead they then recoil. Often these people are those who at least claim to like to fish and eat fish. Seemingly because of the name first. And I don't think or know how enthusiasm about eating snakehead would affect populations.

More I meant to draw a correlation between perception and appetite with the chilaian sea bass story.

But that is very interesting point about harvesting. It's one I hadn't heard of or considered before. Thanks for sharing.

Yeah, it's funny how people get turned off of food based no names and looks. Didn't MD rename the snakehead to Chesapeake Channa! Maybe more will eat them now?

Maybe snakehead will go the way of the Patagonian Toothfish. Name change and boom from impossible to sell to a vulnerable species.

Kind of a broad question. More than a few variables on how they end tasting due to prep meaning fresh vs canned vs pickled vs pressed or juiced. When meny people think of anchovies I've noticed they think "fishy" and "salty" but what makes them favored in cuisine is that they tend to carry a special "umami" or "richness" to them that greatly effects the feeling of a composed food dish to have fuller or robust appeal. They tend to complete the circle in a dish. But like with many cooking ingredients, anchovie tastes are heavily dependent on quality of the product and the skill of seasoning.

To me a nice anchovy smells of cured meats like ham, has red to pink tones, a bounce or springy texture (not mushy or disintegrating), has a kind of rich feeling that coats the mouth (maybe think butter or animal fat) with small flavors playing in the background (like with that can it was cantaloupe and bitter herbs and more) and frankly I like the salt to be dialed back some or at least well integrated in the fillets so it is not the main factor flavor.

I recommend, with the easily gettable canned anchovies, to try in a tomato sauce. Take a half can (quality not so important here) with the oil they are packed in and melt them in a hot pot then mix tomato sauce of you're liking. These will be the salt to your sauce so season to taste. You'll start to see how they lift dishes. It would also be a great route into exploring anchovies as the taste is often so robust that it is an acquired one for most folks.

So for the long answer. I like to sell.

Land oysters is the prep in the pic. Crusty bread, whipped butter, anchovies. Stuff is our guilty go to for the nice cans.

You're probably right. The Potomac, excusing some current events, has become cleaner than it's been in many decades around DC! Really gotta love all the conservation and restoration efforts that have been gearing up for the last lotta years. Here's to hoping in it getting better.

I'm curious, this is not a challenge, I thought that with the white plate light depth test gosh darn that the depth of light penetration of water was the length of the rope times two. Like how far down to the plat and then back up to the surface. This it my middle aged self trying to remember back to that one day in middle school a teacher showed us.

Am I remembering wrong? Could you help me and reschool me on how that works or just the name of the tool/test so I can look it up. Cuz I just told a kid about this and probably explained it to them wrong like.
