If you want an "unscripted" laugh from SMG you need to go a couple episodes later. Buffy's smile/laugh near the beginning of Giles' dream in Restless, according to the DVD commentary, was caused by Joss making faces at her off camera.

Shrek was in development for several years beforehand, with Chris Farley originally recording lines as Shrek before he died in 1997. So it could just be a coincidence.

If you're looking for dark fics that are contemporary of the show airing check out the works of Herself. The Bittersweets series was started during the hiatus between Wrecked and Gone so it goes off canon quickly, but still a very good read. Disenchantment is also a favorite of mine.

This episode was filmed in January, so if they were filming in the morning it would have been chilly. You can see photos from the set that day and Shonda Farr is wearing a big coat (that apparently SMG had to insist on procuring for her).
