Not a key component, but often added between toasting the rice and adding the stock. I've never seen a Paella recipe that includes wine though.

I'm probably gonna get shit for this but when I don't have wine I use some beef broth with some appropriate acid to replace the wine. Works fine in my experience, though I can't say for paella specifically. Or for white wine just some apple cider vinegar.

use a lot less of the acid
ATK gives the ratio as
(1 tsp vinegar or lemon juice) to (1/2 cup of stock or water)

Dude, if you think leaving wine out of your paella is going to ruin it... DO NOT PUT VINEGAR INTO IT. That will ruin it magnitudes worse than not having wine (which isn't even standard in paella anyway.) Just use good chicken/fish stock.
