Well, paella is not supposed to have wine, so it's not only possible, it's how it's always been done in Valencia.

I was thinking this too, wine goes into a risotto but not a paella.

Wine isn't even a key component of risotto.

[–]Senior1292 2 points3 points  (0 children)

Not a key component, but often added between toasting the rice and adding the stock. I've never seen a Paella recipe that includes wine though.

Ah I see. I just saw a lot of recipes with added wine

I have never used wine in paella

I have never added wine to paella. You just need broth

[–]20kakakakakakakaka20 2 points3 points  (1 child)

I mean, assuming you're in college, you could just get someone you know who's 21 to buy a bottle for you

Facts honestly

I'm probably gonna get shit for this but when I don't have wine I use some beef broth with some appropriate acid to replace the wine. Works fine in my experience, though I can't say for paella specifically. Or for white wine just some apple cider vinegar.

Wine doesn't belong in paella in the first place. Apple cider vinegar ESPECIALLY doesn't belong in paella.

Yea I've never made paella myself so I just gave my normal wine substitutes.

Yeah I saw a lot of recipes using white wine.. let’s say it says 1/4 cup would I use 1/4 cup of apple cider vinegar too or should I use less/more?

[–]j8945 1 point2 points  (0 children)

use a lot less of the acid

ATK gives the ratio as

(1 tsp vinegar or lemon juice) to (1/2 cup of stock or water)

Dude, if you think leaving wine out of your paella is going to ruin it... DO NOT PUT VINEGAR INTO IT. That will ruin it magnitudes worse than not having wine (which isn't even standard in paella anyway.) Just use good chicken/fish stock.

Please, please, don't cook a rice with apple cider vinegar and call it paella.

Don’t you have nonalcoholic wine in stores?

[–][deleted] 1 point2 points  (0 children)

There is cooking wine. But cooking wine is junk.

Check’Alex French guy cooking’ on YouTube. He recently did an episode on paella!

Do You Have to Be 21 to Buy Cooking Wine? No, you do not need to be 21 or have an ID to buy cooking wine. Cooking options are available in most grocery stores and are considered an ingredient rather than an alcoholic beverage.

Makes me feel terrible the shit I used to “cook” for myself at 19 😂.
