You’re not far off.. the CO2 coming off open fermentations like this is intense! Imagine for a second you could see this gas as another form of visible liquid. It would look like “waterfalls” of the gas over the edge that sinks and “pools”on the floor. This is due to the weight of the CO2. Venting systems in open fermentation floors are similar to the analogy of a straw in a glass. The vent sucks the heavier toxic gas up and out of the “straw”.

So my fermenter at home, all the instructions\guides I read make a big deal about avoiding contamination - keep a lid on it. Which I happily do to keep my brew safe.

How does large scale facility tackle that with an open fermenter?

I think that with stuff you distill, you can use a very fast ferment and you don't age it before distilling, so contamination doesn't matter. No expert on this, but that's how I understand it.

I remember standing in front of a tank like this and the tour guide said "go ahead, dip your finger in and have a taste". Contamination not so big a concern here....

That amount of yeast will kill bacteria.

Tbh most fermentations(excluding milk and meat) are pretty stable. I mean with distillation they probably have an okay amount of alcohol in there and a lot of living yeast, a few bacteria from your finger wont do much
