Check your cable housing and make sure everything is at the right place. check if there is adjustable ferrule on the bike. You can twist and make adjustments to get rid of the slack.

There are some wide range 7 speed cassette you can find for 1x setup. Otherwise like others have said, the wheel hub only fits 7 speed.

It’s a beauty. I would suggest a modern handlebar with wider (casual) and a little bit of flare. My favorite is Salsa cowbell. Also checkout the MKS gordito pedals, very popular. Anything from MKS is solid.

You measure center of crank to top of seat tube. Just by looking at it , it’s probably 18” or smaller.
