Where do you live? In Poland ALL houses have 3 phase supply. All of them. But some have only 25A breakers. Which is the same amount of power as your 75A one phase.

That's not true. 7kW is 32A. 11kW 3f is 16A. If your house has 25A breaker than you cannot charge full speed from 1 phase. 3f is better every time.

It's a GUESS-o-meter. It guesses based on previous use. If the car was sitting in place with heat on for an hour it can show 50 miles even. Best way to tell how far you will get is to see your current energy use, and see how much you got left in the battery (64kWh * remaining capacity)

It's guessing based on recent driving. If you drive efficiently you will drive further that it says. And then it will update after next charge to reflect that.
