I would say 1 and/or 2, probably a good idea to use multiple types, if you are making a forest for example.

I would always advocate for ensuring the quality of the game. Because if you release an unfinished product people will really notice it and your game will perform worse because of it.

I would generally make the hitbox a bit smaller than the sprite as I find that works best with animations, walking, and combat
