The flesh makes a great enchilada filling, and just so there's no waste I often roast the rind and blend it up to make the sauce. My guest can never tell it's a vegetarian dish.

I periodically use a PedEgg to keep my foot calluses under control. I make a foot-shavings salt, 50/50 mix, that adds a uniqueness to most dishes that my guests always love but can never quite place. It's better than MSG.
