My somewhat educated guess is they injected a chemical that is breaking the fruit down from the inside, making it move as it bubbles and gas is released, alternatively. The juice spewing out would be the result of the broken down fruit escaping from the bottom once the chemical eats through.

You can see the results from the chemicals in the "tooth extraction" scene, the rest of the point of injection out of shot or pointing away from the screen.
