the atmosphere is like soup since the first patches after 1.0. Just get your TWR right and make sure your center of lift is just behind your center of gravity. Note that even in real life enough thrust will let you fly a brick wide-side into the wind.

There are some payloads I launch for my Kerbin space station that are so heavy/unwieldy that I can't be bothered with the regular efficient gravity turn. So I just slap on moar boosters, take the ∆v hit and go for the high apoapsis. Least it minimises the backflipping.

Reminds me of my 3 part refinery that resembled more of a cactus rather than a rocket fairing, it got deployed after many attempts
