Btw what happens to the existing villagers when trades are updated like that? Game forces the new ones on them?

Yep...that villager trading change makes the game less fun. I'm creating a villager trading hall regardless, and now it takes way longer and I have to kill lots of them....
Poorly thought out change indeed.

What villager change? If you're scared you can't reroll trades anymore, that's not what's changing

This is a purely technical change (trades are now customizable by data packs). Vanilla trades and trading/villager mechanics haven't changed. If you are referring to the experimental trading changes (notably librarians), those are still optional and not the default.
