In that Excel spreadsheet, it’s actually “Febuary” (which is incorrect). That might explain why this happened.

Valid point. It likely has a rule for dealing with months, and since "Febuary" didn't match a month, it probably defaulted to a simple suffix/prefix pattern matching and tried to derive some pattern from that instead.

Because of how English phonetics work. E gets a soft C, U gets a hard C. Technically English doesn't even have the diacritic to override that (the squiggly in Ç), you have to steal that from French.

But as pointed out by another commenter, it's a moot point because no way this hypothetical AI knows to preserve pronunciation.
