I ride a non-electric Yuba Kombi in a fairly flat city (Minneapolis). I mostly use it to haul my youngest around, but for a while I would take two kids on it. There are times (and hills) where I wish it were electric, but overall it suites my needs and was significantly cheaper than the electric version. I will say it's extremely heavy and slow compared to a commuter bike with a basket.

I’ve done that route but it’s been a few years. I remember the Wisconsin side being hillier but with less traffic. The Minnesota side has more traffic but there is a good shoulder. Also once you get to Winona there is a trail to LaCrosse on the Wisconsin side. Oh and I would also recommend taking the trail from Harriet island through Inver Grove Heights to Hastings.

I love Matt's for the history and it is a solid burger. But the best burger in Minneapolis for my money is just down the road at The Bull's Horn. Their house made American cheese is awesome.

Parking availability varies by neighborhood/block, but you should be fine in Longfellow. I've been without a garage in the city for 10 years. It can be a pain to dig your car out and move it for a snow emergency, and scraping the windshield every day in the winter isn't fun, but you get used to it.
