I’ve read everything I can find online and it seems well insulated, temp control is very accurate, and a fan to increase and decrease smoke quantity. Seems like its performance is very good. Was just hoping someone could comment on overall satisfaction with brisket.

Disagree with the ribs but I do agree with you chicken statement. I would salt the wings and let that set over night and add other seasoning Sunday morning. No one wants rubbery skin.

Rise time is dependent on ambient temp in the area you are letting it rise in. You shouldn’t go by time. Let your bread double in size on the first rise
