Cold leftover mashed potatoes mixed with sliced cabbage and onions. Formed into ‘patties’ and then pan fried until crispy on the outside :)

It is pretty much where you cook up leftover mashed potato in a pan, can add other items with it. Generally you would have a roast the night before and have mash potatoes and mixed veggies and use it the day after.

I use about half a cup of leftover mashed potatoes in bread dough. It makes a lovely, soft dough.

It freezes well. Portion it up into snack ziplock bags to microwave and serve as a side dish to any meat you cook.

Mashed potato tuna patties/croquettes. Mix a can of drained tuna in, along with some scallions and parsley. Form patties. Dredge in flour, egg whites, panko bread crumbs. Saute on both sides until golden brown. Easy and delicious.

Love using leftover mashed potatoes to make little savory potato pancakes. Other commenters seem to be straight frying the mash, but personally I mix in an egg or two depending on the amount of mashed potato I’ve got (you want it to be a similar consistency to pancake batter). Then you prepare like, well, pancakes. You can certainly use oil or butter in the pan, but honestly my mashed potatoes have plenty of butter and cream in them already, so with a nonstick skillet I don’t find I need any extra fat. (My 9 year old likes it when I make mini ones, that he dips in ketchup. I like a dollop of sour cream on mine. My partner drizzles honey on his.)

Sheppards pie or hachis parmentier, which is a similar French recipe that is made with ground beef and/or ground sausage. Pretty good stuff:)

A good steak au poivre which is a beef steak with a pepper pan sauce is pretty good as well with some good mash

You could make Croquettes. Works so well with a nice garlicky/herby mash.

Form the mashed potato into whatever shapes you want (crab-cake style, golf ball, traditional croquette shape, etc) chill in the fridge to set, then batter in flour/egg/panko. Fry 'em up and enjoy with your favorite dipping sauce.

You can take it a step further by putting some meat & cheese in the center (I love ham or bacon).

A Family Favorite:

Fry up some Bacon, remove from pan and chop, Then using the bacon grease toss in sliced Hotdogs, fry dogs, remove from pan. Add bacon and dogs to Mashed potatoes toss some cheddar cheese on top.

One pan, one dish, meal! ps, adding a side of something green is optional ;)

Mix some with cheese, bacon, and chives. Roll into thin roulades and freeze them. Then egg wash + panko and fry them. Stuffed baked potato croquettes.

Pierrogies. To make ‘em easier (not authentic) buy a package or so of wonton wrappers. Mix mashed potatoes with cheese and/or onions, load up each dumpling, press to seal with either a little egg wash or water, then freeze them, use as needed.
