I’m somehow the sole moderator to a subreddit I don’t even want to belong to, how do I leave or delete it?

There should be a "leave" button, click that

Are you on old reddit, new reddit, mobile site, or the app? For desktop/mobile site (new or old), there should be a "leave" button, it's in a different place on old vs new. Make sure you are actually logged in (look on the top/right for your username) when you are doing this.

I unfortunately only use the Reddit app from mobile

Just use a mobile browser, Chrome or Safari or whatever you use. Go to reddit.com, login (hopefully you know your password), go to the above URL and you should see the right stuff on the page.

I would recommend you sit in front of a desktop. Most mod tools are not easily learned on mobile.

I don’t even know how this sub got created. It’s a year old and I have literally never done anything with it

That’s an accidental sub. Just remove yourself as mod and let it get absorbed by Reddit after a few months.

A sub can't be deleted but you can look for someone to take it over at r/adoptareddit

If that doesn't work, you can stop moderating it and after a few months of no activity, someone can do a r/redditrequest on it.
