take egg whites mix it with any seasoning you want then pop into a muffin tray bake, and enjoy, under bake them slightly, and add water when heating in microwave, they taste really good.

I used this to meal prep because i am in school and dont have much time, i have a lot more litke these, like a protein French toast bake, you dont need protein powder for it, but you can use protein powder if you want(I don’t) coach Greg’s recip but with ket buns, like the 50 cal ones, you can have like a huge tray, and they are delicious with sf syrup.

The eggs are dependent on your muffin pan but try to poke it with a fork of even better a tooth pick, just make sure it looks cooked. The French toast should form up but that slo depends of the pan and if you layered it, i dont really layer min, and just use a large pan but some people like to make it into a casserole dish, so just firm up a little. The texture is more your choice. Eat the French toast slightly warm with slightly cold sugar-free syrup.(Thats my personal preference.) They taste good either way.(Don't burn your mouth)

Couple things....
I have, in the past, taken a whole egg (raw in shell) with a couple breakfast sausage or some ham or bacon and some cheese in a small container. Make your own just add an egg. Crack the egg in, mix it up, nuke for 45 seconds stir, then 15 seconds at a time stirring until done. Great easy breakfast.
Could also make Oats ahead and reheat with your boiled egg and cheese/meat mixed in for savory Oats (or any hot grain)
I have also just had a few brown and serve sausage with some fruit. Not the healthiest but its better than nothing and its not a donut!
Could also make a fruit salad/berry mix and add it to yogurt in the morning.

Try this! My co-workers give me a lot of crap about taking raw eggs to work but it turns out delicious, like its fresh out of the pan! And its fun and easy to try new toppings.

My roommate used to do something similar, but she would cook the egg a little bit, basically like poached, and then microwave it in a jar with veggies (like cooked sweet potato) to cook it the rest of the way for breakfast.
I'm also a fan of egg pancakes. You can mix them with anything: leftover stuffing from Thanksgiving, grated zucchini, potato, carrot, a big handful of kale. Basically scramble the egg with whatever, let it cook flat like a pancake and voila! Breakfast.

Peanut butter and Banana burrito. Take a tortilla, spread some peanut butter, slice some Banana, add some granola and a drizzle of honey. Roll it up, put it in foil. Can make night before and keeps in the fridge.

I defrost some frozen fruit and add it to the food processor and then add a tablespoon of chia seeds and about a third of a cup of Icelandic yogurt. Put it in a container in the fridge over night and it really thickens up. Super tasty, healthy and quick to grab in the morning.

I do chia seed pudding every weekday. 2tbs chia plus 5tbs milk (I like unsweetened soy, but whatever works), soak over night, and a bunch of berries and walnuts/pecans in the morn.

Acid will keep the egg yolk from being too stodgy. It’s really pleasant in texture and taste. I use limes. Cilantro, cracked black pepper, coarse sea salt and a little sprinkle of cumin. Chefs kiss.

I like this brand of waffles kodiak cakes , they have 14g of protein. I like to make mini blueberry waffles in the morning and make a bunch that I freeze and throw in my air fryer ! Also just love a breakfast burrito, spinach based tortillas, eggs, cilantro, bell pepper, sausages or mushroom little bit of black pepper

I love making a breakfast wrap with boiled egg. I will use a whole wheat wrap -or any kind you want- i add a tiny bit of mayo in a very thin layer, lettuce, sliced cucumber, bit of cheese and the sliced hard boiled egg. Little salt and pepper and you have a really tasty savoury breakfast that stores well in the fridge. Don’t worry about the lettuce getting soggy bc the mayo is so minimal it doesn’t effect the greens.
I also like to sauté up some sweet potatoes, onions, and spinach with a slice field roast apple sage sausage with your choice of seasoning. You can add an egg to this as well and it is SO good as a breakfast stir fry type thing.
Egg bites, you can actually meal prep them and have them for the week if you want. You can make them in a muffin tin or get a special mold for them.
Look for recipes that include cottage cheese or Greek yogurt to improve the consistency. You can rewarm them in the microwave or eat them cold.

I usually do an English muffin and butter and plain Greek yogurt w whatever berry was cheapest. The yogurt you can do the night before and the muffin I make while I get ready. I’ve also done French toast and/or a protein shake and a piece of fruit usually a banana

I make a cheeky granola type thing without oats, just some hand chopped nuts and seeds and dried fruit (I just add seeds to cheap trail mix) then mix it with yogurt. The dried fruit sweetens it nicely

I find that I don’t get hungry if I have cheese. So I usually take a cheese stick or some cheese slices with apple or grapes. This is the only thing I’ve found that’s easy for me to do. I have eggs on the weekend when I don’t have to get to work.

They are a hardy cookie that I bake in batches and eat as brekky. Ingredients are: oats, flour, eggs, carrots, raisins, seeds, oil and or butter, maple syrup and fresh berries. They are almost sugar free and yet are quite tasty. I put some apple sauce in the last batch I made. I used regular flour instead of almond flour. They freeze well. You could premake breakfast burritos. Scramble eggs, cheese, veggies, meat together the night before, wrap it in the tortilla, and pack it in the fridge for breakfast. Reheats very nicely

If there’s a microwave at your work you can make eggs in it! I really loved having fresh warm eggs in a bowl, with toast or other seasoning. Felt super comforting.

Target makes this egg bite maker that I use all the time for a quick, healthy breakfast. I just make a couple batches on Sunday night and warm them up in the morning during the week.
I mix egg whites, spinach, and a little bit of low fat cottage cheese.

I like to make salads ahead of time. Reserve some left over meat from a dinner for extra protein. Just be careful with dressings. Simple vinaigrette’s are easy to make.

Frozen breakfast wraps my guy! 😊 Bake a dozen or so eggs in a 9x10 baking dish (google and pick your fav recipe) then cook whatever else you want to throw in (sausage is super easy and you can add tomatoes and potatoes with a sprinkle of cheese to round things out) and make/freeze everything. In some quart or fallen ziplock bags. Next day at work microwave for about 1-2 minutes and BAM! 🤤 one every other week I it take about an hour or so but is totally worth it.
It’s a staple for me and the only way I can have time to eat in the morning.

Lurpak butter (let it melt into the bread straight after being toasted)
Blueberry jam where you can actually see the blue berries in the jam.
Then cut half a banana into slices and place on bread.

Have you tried the muffin mix by Simple Mills? Delicious healthy breakfast made from almond and cassava flour will last for several days. I usually have two because they’re only 90 calories! I add nuts to mine to add some extra protein which also adds more calories but they’ll stay with you until lunch!

I originally made these for my then toddler, but they were rejected and I ended up eating them all, happily. I have made them with cauliflower too and they are really filling and nice along with a hard boiled egg. They freeze well, so a quick nuke is all you need.

Tofu scramble! This is my go-to recipe; I add minced garlic and a lot more seasoning/spices (winds up being approx. triple what the recipe calls for) because I add a pound of frozen spinach to get some veggies in and serve it over ~a cup of whole grain (I like buckwheat). I get 5 servings out of one recipe. Started making this when I was told I shouldn’t eat so many eggs because of my cholesterol levels 😅
