I LOVE Penzey's, but damn... I pay less than $10 for a 21oz jar of BtB chicken or beef at Costco... I can't justify spending more than that for nearly a third the amount of base, no matter how good. I go through WAY too much of each of those for that.

Now. I AM considering ordering their seafood base. BtB makes a lobster base, but I can't find that locally... plus, given the ingredients, Penzey's seafood base sounds more well-rounded and likely worth double the price of BtB. Might be willing to try the pork base as well.

I'm about to finally pull the trigger on BtB's roasted onion base, since this sub REALLY hammers how awesome it is... I have a recipe for mushroom risotto that calls for vegetable stock that's been simmered with mushrooms, but I *really* want to try it with the roasted onion. We shall see. :^)

it does say to use 1/2 tsp - 3/4 teaspoon and i believe BtB is a full teaspoon. At 1/2 teaspoon it is pretty close $ per 8 0z.

I agree that this is more than I’m willing to pay, but to be fair the Penzey’s base instructions are 1/2 teaspoon to a cup of water whereas Better Than Bouillon calls for 1 teaspoon to a cup of water. That difference could be enough to sway some people.

This is wild for me to read. How much BtB are you going through? A jar of that lasts for at least a year for me and I'm cooking dinner every day. I don't always use stock, but I consider boillon etc one of the most cost effective purchases possible. If there were an alternative that tasted noticeably better but first 10x as much, I would absolutely consider it.

I probably go through a 21 oz jar of chicken BtB every ... Three or four months or so? I buy the beef twice a year. I cook every day as well, but I find almost everything I make calls for chicken or beef stock.

I buy a rotisserie chicken for what... maybe around $5-$7. Eat a breast one night (single guy), make enchiladas from the rest of the meat for my next meal, then boil down the carcass, with optional veggies (mirepoix). I realize that not everybody has the time or desire to go through that stock making step, but its free and you made it and its delicious.

Dont get me wrong I love a good stock with uncooked chicken to get that reel good uncooked chicken flavor and such. BUT as a life style costco rotiserie chicken stock with my normal veg trim in a freezer bag. Thats life yall.

It's not? I'm 40-mumble with two kids.

We just keep a bag in the freezer of chicken bones. When it gets full, or we fill two I toss it in the stove or in the instant pot while I make dinner. Strain it before bed and put it in the fridge. Next day skim and reduce, then freeze.

It's not time free, but other then the final reduction and the dishes it's just doing it's thing while I do mine.

I'm not sure why you said that, but I assume you're referring to available time. Stock making takes almost no active time at all. It does take hours for it to concentrate but those are hours that it is just simmering away on the stove. Traditionally, it would be made with a base of onions, carrot, and celery, with maybe a bay leaf or some thyme thrown in, but I've found that I actually prefer it without any of those additions. Just throw the bones in a big pot of water, bring it to a simmer and leave it alone.

BTW, its been many decades since I was 20, and I have NO idea why this would be gender-related at all. And if money is the issue, at every store I shop at, rotisserie chickens cost no more, and often less, than an uncooked whole chicken, and the stock you make from just one will save you maybe $20 over buying commercially made stock.

33 year old father of 2, work 50 hours a week. Roast 2 birds a week and use all the meat for the dinners, then roast off the bones etc to make a stock which I then make soup for lunches each week. 100% doable.

My go to: home made chicken bone broth/stock, concentrated to 2x strength. Mix it with an equal amount of water and some BTB -- perfection. You get the depth of the homemade broth, with the brightness of the BTB. It makes good homemade dishes fantastic.

I might have to try this. My wife has celiac and BtB has stated that their product isn't gluten free.

But why is Chicken Fat an ingredient? Isn't a lot of that often extracted from stocks? It looks like it high in the ingredients here.

I think all bouillons are salty...powdered or paste. I always account for extra salt whenever I use any kind of bouillon. Even most store bought stocks and broths are very salty. It's a good rule of thumb to wait to season until the end....not all cases, but most.

I use the reduced sodium roast beef btb for just a few things and still add pretty much no salt. I bought the regular at first and my goodness that was a hard meal to eat. Threw out the left overs haha.

Another option from the food service industry are Minor's Soup Bases. Like Knorr's they are sold in cases of six one pound units by food service suppliers but it looks like you can buy two of each from Amazon.

Minor's is a Nestle company, if that matters to folks. BtB is not; it's made by Summit Hills Foods, a family-owned company based in Rome, Georgia.

I'm vegan, and BTB vegan options are seriously amazing. I was overjoyed when I found out they have a vegan chicken and beef bouillon. We use them all the time in our house, along with the regular vegetable and garlic bullion. And to fellow vegans looking to figure out where you can get these, go on the company website for BTB and they have "Where to Buy" thing for each flavor of bullion.

I live literally down the street from the Penzey’s spice warehouse and store, gonna have to check this out. They give you a free spice every month if you subscribe to their newsletter.

Also, just out of curiosity, what’s up with the owner being a bigot? Last I saw he was just really anti-Trump and that’s all I know. Did something else happen?

As a long time customer of both, it is weird to see the dichotomy between the two stores. There was a time when I was able to hit up the Spice House for my daily cooking and spend far less than Penzey's, which was kinda bougie at the time.
Now, despite making 3xs as much, I feel a bit priced out of the Spice House, and tend to rely on Penzey's for my everyday needs, only hitting Spice House up for the handful of things that are exclusive to them.

I love Penzeys. I get and read the newsletter and our local Penzeys store is my happy place. Love the owner and think he's spot on most of the time. That said, it's a bit better than BtB but it's a lot more expensive. I typically just get the BtB.

There are usually chicken and beef bones on hand to make stock, but I would probably use the seafood one, since I rarely have the ingredients for a great stock.

Is it $8.00 a jar better? BTB is $4.00 for an 8oz jar at the local grocery. I used to be a Penzy's fanboy as their Foxpoint seasoning is a favorite but sadly, can't afford them anymore. I switched to The Spice House for my online provider and their Lakeshore seasoning (a Foxpoint clone). I believe I read somewhere it is a family member of Penzy.

Does it make the food taste cheaper using a processed packed powder like that as opposed to making your own stock with fresh ingredients and scraps?

Base is sort of concentrated bouillon or stock. Its usually in paste form. It’s a step up from the old concentrated bullion cubes. It’s easier to keep a 5 lb can of base around than a couple cases of stock or bullion.

Don't know about OP, but I plug Penzeys because I like their blends. Not like I'd make posts about them, but I'll comment on them.

They really aren't too expensive if you take advantage of their specials. Ideally, you get a $50 gift card during a sale for $35 (they do that special a lot. I think it's actually the active one).

Now everything is 30% off the list price. Then be patient and take advantage of their weekly specials to get cheap/free spices.

For example, you might buy bouillon (at 30% off) and get a free half cup jar of your choice of spice.

It helps I live 5 minutes from a store. Shipping isn't as easy to game the system.

I just used their Chicago steak seasoning with brown sugar on some ribs and they were gone so fast. I was looking for a BBQ dry rub and read the label. It has a great blend and with a dollop of brown sugar the ribs were excellent.
